- In a pan, crush one packet of graham crackers (out of the three that come in a normal box). On a parchment-lined sheet pan, push the crushed crackers into tiny heaps for each cookie you wish to create.
- Place a few tiny marshmallows on top of the dough that has been scooped or spooned on top of the smashed grahams.
- Bake for 11-14 minutes at 350 degrees, depending on the size you choose. When completely cooked, the marshmallows should be golden brown.
Peanut Butter Cups in Giant Size
Our only cookie that requires the use of specialized equipment, in this instance large muffin pans. They’re called Texas Muffin pans and are widely available (Amazon.com; Good Cook 04033 Non-Stick Texas Muffin Pan, Steel, 3-1/2 in Dia x 16-1/2 in L x 10 in W x 8.7 in H; Home & Kitchen). Preheat the oven to 350 degrees Fahrenheit.

- Make 24 even pieces and roll them into balls.
- Place each one in a muffin tin that has been lightly greased. With a tiny glass, flatten and indent the dough gently. On each one, place a full-size Reese’s peanut butter cup.
- Preheat oven to 350°F and bake for 13 minutes. Allow to cool for 10 minutes before removing from the pan with a tiny knife.

When they’re still soft, indent the face with the point of a knife to create a delightful jack-o-lantern appearance.
Snickerdoodles
Korintje cinnamon (made famous by Cinnabon) or Vietnamese cinnamon may be used to enhance the taste of this traditional biscuit. Both have a stronger scent than regular cinnamon. Preheat the oven to 350 degrees Fahrenheit.
